Over the years, multiple styles of BBQ have been introduced throughout various regions of the United States. While most varieties of BBQ use similar cooking styles, meats, and sauces, the finished product can vary greatly in quality, tenderness and taste. At Sooey’s BBQ & Rib Shack, our BBQ professionals are well versed and passionate about the many styles of BBQ, and have provided a list of popular BBQ styles below.
Kansas City Style
This style is perfect for anyone with a sweet tooth, as most Kansas City style rubs will contain a good amount of brown sugar. Using a thick tomato and molasses based sauce and cooked slowly over low heat, this style of BBQ focuses mostly on pork, pork ribs and occasionally, chicken.
If you’re a fan of sweet and spicy, Memphis Style BBQ could be for you. Traditionally, dry ribs are seasoned with a paprika-based spice mixture before being placed into the smoker. These ribs are normally served without any sauce, as the rub and cooking technique lends to the tenderness of the fall-off-the-bone meat. If you prefer your ribs to be wet, brush the ribs with your favorite sauce before and after cooking.15
Texas style BBQ is a favorite to those who love bold flavors. With a focus on beef, beef brisket, and beef ribs, this style uses a dry rub consisting of dry mustard and chili powder. The sauces made to compliment this type of BBQ can include ground chillies, onions, cumin, hot sauce, beer, and occasionally, coffee.
While there are many variations Carolina BBQ, our favorite Eastern variety uses the entire hog. Brushed with a tangy, vinegar-based sauce, this type of BBQ is smoked very slowly for a minimum of eight hours. While the Western style BBQ uses the same cooking method, there’s usually a hint of tomato in the vinegar-based sauce.
